Earth Day Supper at The Inn at Rancho Santa Fe In Partnership with Lilian's & Coastal Roots Farm

Some meals nourish more than just the body.

This Earth Day week, The Inn at Rancho Santa Fe and Lilian's invite you to gather for an evening rooted in the land, the season, and the community that makes it all possible. In partnership with Coastal Roots Farm — a certified organic, regenerative nonprofit farm cultivating over 60 varieties of seasonal crops across 17 acres in Encinitas — Executive Chef Patrick Ponsaty has crafted a three-course menu that begins where all great cooking does: in the soil.

Seasonal Produce 

Each dish reflects what is growing right now, prepared with the care and craft that both The Inn and Coastal Roots Farm bring to everything they do. A curated wine pairing will accompany the meal, and guests will be treated to an intimate fireside conversation between Chef Patrick and Coastal Roots' Director of Farm Production and Distribution: Adam — an honest, inspiring exchange on regenerative farming, seasonal cooking, and what it truly means to tend to the land we all share.
