A New Season at Lilian's: The Summer 2026 Menu Has Arrived

There is something about summer in Rancho Santa Fe that feels almost edible — the salt in the air, the warmth settling into the evenings, the gardens at their most generous. At Lilian's, that feeling now has a menu to match.

The Inn's culinary team has spent months crafting a summer 2026 menu that feels genuinely of this moment and this place. Rooted in coastal California cuisine, guided by sustainable sourcing, and inspired by the season's peak ingredients, each dish is designed to be as memorable as the setting itself.

Where to Begin

Start simply — and beautifully. The Focaccia arrives golden and pillowy, served alongside tomato tapenade, oil, and balsamic. It is the kind of dish that sets the tone for the whole evening, and one we suspect you will be ordering every time.

For something lighter, the Tomato & Burrata Salad is peak summer on a plate — heirloom tomatoes, marinated burrata, basil pesto, and white balsamic. Fresh, unfussy, and quietly perfect.

The Crudo & Ceviche Moment

Two of the menu's most striking dishes lean into Lilian's love of coastal California seafood. The Hamachi Crudo — dressed in a coconut cilantro vinaigrette with cilantro oil, Fresno chilies, and Cara Cara oranges — is bright, bold, and beautifully balanced. The citrus and heat play off each other in a way that feels effortless.

The Scallop and Shrimp Ceviche takes a similar spirit in a different direction: avocado citrus puree, charred pineapple relish, and tostadas come together for a dish that is as fun to eat as it is to look at.

Something for Everyone

The new menu reflects a genuine commitment to breadth without compromise. The Beet Fettuccini — made with pistachios and vegan ricotta — is a standout for plant-forward diners, rich and satisfying in a way that surprises.

For those drawn to the ocean, two entrées shine. The King Salmon is served over corn succotash with a ginger corn puree and salsa matcha — a dish that tastes unmistakably like summer. And the Ginger Lacquered Pacific Snapper brings a more European sensibility, with arugula pesto, cannellini beans, artichoke hearts, cherry tomato, and a beurre blanc that ties it all together beautifully.
